Not only are they delicious, but they’re also so easy to make. You skip the baking for these cookies, so they’re quick and simple to make from scratch in only minutes.

Ingredients for Butterscotch Haystacks
- 10 ounces chow mein noodles
- 1.5 cups butterscotch chips
- 3/4 cup peanut butter
- 1/2 cup salted peanuts
Variation Ideas
There are lots of ways to make this favorite no-bake dessert.
You could add in chocolate, caramel, white chocolate, marshmallows, Nutella, or coconut flakes.
Substitutions
You could substitute pretzels for the chow mein noodles.
You could make them with cashews and cashew butter.
You could make them with almonds and almond butter.
Important Tips
I used creamy peanut butter, but you could use crunchy peanut butter as well for an added crunch!
For this recipe, you’ll weigh the chow mein noodles. 10 ounces equaled about 7 cups of noodles for me.
You’ll want to use wax paper, parchment paper, or silicone mats for this recipe. I suggest laying it out on a cookie sheet to make it easier to move your batches around while they’re setting if you need to.
How to Make Butterscotch Haystacks
Start with a large bowl and place the peanuts and chow mein noodles inside.
Next, in a medium saucepan over low heat, melt the butterscotch chips and the peanut butter together.
Pour the butterscotch chips and creamy peanut butter mixture over the peanuts and noodles and toss together until all coated.
Drop by tablespoons onto wax paper making little piles and allow to cool.
Storing Haystack Cookies
Once the cookies have cooled, you can put in a bag or airtight container for up to two weeks on the counter.
These homemade cookies are a tasty option to take to a potluck or to share at a bake sale.
