椒鹽蒜香骨
Salt & Pepper is such an aromatic, addictive, delicious seasoning mix… it’s like dope. The mix is available at Asian markets in little jars or packets, but you can also make your own easily. Recipe is enclosed.
Salt & Pepper Spicy Mix
Ingredients
* 3 Tbsp salt
* 2 Tbsp five spice powder
* 1 Tbsp white pepper powder
Directions
In a pan, add salt and heat without oil, stirring regularly, to dry the salt. Turn off heat, add in white pepper powder and five spice powder. Adjust to taste by changing the ratio of ingredients if needed. You want it not too salty, with some peppery kick and flavor from the five spice.
(Traditional recipes always call for heating the salt in pan to dry it first, so I list the direction here. I’ve tried it but didn’t feel that it makes much of a difference, except it scratched my nonstick pan. Maybe the step is essential in Hong Kong with the high humidity.)
Salt & Pepper Garlic Pork Ribs
– This recipe is made using airfryer. You can of course fry the ribs in oil or bake in oven.
– The ribs I got at Costco are cut into 1″ sections already, which is often the size used in Chinese recipes to be easily picked up with chopsticks. Feel free to use longer ribs, please increase cooking time accordingly.
– This recipe is also great for chicken wings or mushrooms.
Ingredients
* 1 lb pork ribs
* 1 tsp salt
* 1 tsp sugar
* 1 egg
* 2 Tbsp cooking wine
* 2 Tbsp white vinegar
* 1 Tbsp soy sauce
* 2 tsp salt & pepper mix, split into two portions
* 1 cup flour
* 1/2 cup corn starch
* 1 head garlic, peel and minced, split into two portions
* 1-2 chili pepper, sliced (optional)
* 1 Tbsp sliced scallion, for garnish (optional)

Directions
1. Soak pork ribs in water for 30 min. Drain, lightly squeeze dry. Marinate in salt, sugar, cooking wine, vinegar, soy sauce, egg, minced garlic and 1 tsp salt & pepper mix for 1 hour.
2. Mix flour and corn starch in a deep dish. Remove ribs from marinade and thoroughly coat with flour mix.
3. Let ribs sit on a plate till the moisture on the ribs turn the flour no longer white, about 5-10 minutes.
4. Air fry at 375F for 15-20 minutes till ribs is cooked through (140F). Remove from airfryer.
5. In a skillet, heat oil on medium high, add remaining garlic and pepper, fry briefly till garlic is light brown.
6. Add in ribs, sprinkle salt & pepper mix, toss to coat in garlic and pepper. Plate and garnish with scallion.
