Butter Chicken

Whenever we go out for dinner at our local Chinese restaurant, my youngest son would love to order the butter chicken. So much so that he could live on rice and butter chicken for all his meals.

So I tried to google the recipe online and on YouTube. There were a lot of recipes out there and the basic ingredients was of course butter.

Some of the recipes called for bird’s eye chilies (cili padi) and I opted that out as my family are not expert chili eaters. Some recipes even added in slide cheese and milk for the creamy texture.

So here is my recipe on this butter chicken recipe. You will need :-

1. 300gms~400gms chicken breast (cut into cubes)
2. 5 stalks of curry leaves (remove stems)
3. 3 cloves of garlic (finely chopped)
4. 2 tbsp of butter
5. 2 tbsp of milk
6. 1 egg
7. Flour
8. Salt and pepper to taste

1. Mix 1 egg and flour together to make a batter.
2. Add in salt and pepper to taste into the batter.
3. Pour in the chicken into the batter and mix well.
4. In a pan, heat about enough oil to deep fry the chicken that has been coated well in the batter.
5. Once the chicken is cooked, removed from oil and drain well.
6. In a separate pan, heat the butter and fry the garlic and curry leave until fragrant.
7. Put the fire on low and add in the milk after about 5 minutes. Make sure to continue to stir the milk to avoid it from curdling.
8. Mix all the ingredients in the pan well and put the fried chicken back into the pan and mix well.
9. Best to serve with a nice hot plate of rice.
