Galinha à Portuguesa (Macanese Chicken)
葡國雞 When I mentioned to my husband that we haven’t cooked Macanese food for a while, he suggested we make the Macanese Portuguese Chicken. I am surprised we haven’t made it for the challenge yet – (and even more amazed that he is keeping close tab), but this is the most popular Macanese dish, one that you can find in Hong Kong style cafes all over the world, even if my husband insists that they are not authentic.Till I met my husband, I always presume, like most people, that a dish named Portuguese Chicken comes from Portugal. We are disappointed...
Pan Fried Dumplings

All the dried ingredients result in a mega umami bomb. As the sauce is so flavorful, a spoonful of it on top of rice or noodles can magically transform the dish. In...
Huge Hand-Wired Ortho is a Beautiful Battleship Keyboard
There are all sorts of reasons to build your own keyboard, and we would argue that the more custom the layout, the easier it is to justify the time and expense. At least, that’s what we’re going with for this post about [GoldenSights]’ big, beautiful custom ortholinear called Nearer, as in nearer to perfect. Just look at this battleship! [GoldenSights] has long wanted a mechanical keeb, but has never been into any of the commercial offerings. That goes double since none of them seem to have a vertical Home/End cluster, which [GoldenSights] has become quite attached to thanks to a...
